It’s 2026 and that means a new set of goals or resolutions. This year I am making my resolution to cook 1 new to me meal every week. I have decided the best night of the week for me to accomplish this goal is Saturday night. After a week of eating the same old thing, it will be nice to try something new.
This week’s Saturday Night Supper is not necessarily new to me, but it was a new method of cooking the chicken to me. Cooking the chicken in the air fryer was a game changer! It made cooked the chicken perfectly and required a lot less oil than frying it in a skillet.

Air Fryer Chicken Parmesan

- Season thin chicken breasts with salt & pepper
- Whisk 3 eggs together in a shallow dish and season with salt & pepper
- Pour breadcrumbs and garlic seasoning on plate
- Dip chicken breast in eggs and then coat in breadcrumbs
- Place on air fryer basket and spray with olive oil
- Cook chicken in air fryer at 390 degrees for 11 minutes or until fully cooked
- Place cooked chicken on baking sheet and top with sauce and cheeses
- Broil until warm and bubbly
- Place chicken on cooked pasta
