We made it to Week two of Saturday Night Supper. This week was a football watching week. I needed to come up with something to cook before the game started. This way, we could relax on the couch with the game. We love those ham & cheese sliders, but I wanted something a little different. I decided to go with roast beef. They were super easy to get started and had a lot of flavor which was perfect for a lazy weekend!
I don’t know about you. Every time January arrives here in Michigan, it seems like everyone goes into hibernation mode. No one wants to spend any money after the holidays. We are all tired after making so many snacks and holiday meals. That is why it is important to have quick and easy recipes like this one. Keep them in your recipe book for when you just don’t want to cook. Its also super affordable to feed the whole family a tasty and delicious meal!
I started off by prepping the potatoes and getting them started in the oven. It worked out perfectly because I was done prepping the sliders at the halfway mark of cooking the potatoes. I flipped the potatoes quickly. Then, I added the sliders to the oven. They finished cooking with the potatoes.
I have made the ham & cheese sliders before. In the past, I always baked them in a glass baking dish. This time I baked the sliders on a baking sheet which resulted in a less messy slider. I believe this is the best method moving forward. It helps to keep the bun from getting soggy and prevents making too much of a mess.
The potato wedges came out crispy since I soaked them in hot water before cooking. This method pulls some of the starch out of the potatoes. It gives you that nice crispy crunch. This crunchy texture pairs nicely with the sandwiches.
Ingredients You Will Need:
- Kings Hawaiian Rolls: Using these as the base of your sandwich is a delicious way to add some flavor. It helps make a lot of sandwiches you can store for lunches later if needed!
- Deli Roast Beef: Get about 1 pound of thinly sliced roast beef from the deli. You can get some ham if you don’t enjoy roast beef as a substitute. Making both versions could be a great party idea!
- Provolone Cheese: Provolone cheese pairs nicely with the juicy roast beef! If using ham instead substitute with American cheese.
- Horseradish Mustard: This adds a delicious flavor to your sandwiches. If you are looking to save a little money and don’t have horseradish mustard, try using Dijon mustard. You can also use regular mustard that you already have on hand!
- For the Sauce: For the sauce combine butter, poppy seeds, minced onion, Worcestershire sauce and minced garlic. This is a delicious addition that will help brown the tops of the Hawaiian rolls and add a unique and delicious flavor!
- Russet Potatoes: For the potato wedges all you need is four russet potatoes sliced and some seasonings for a filling side dish! I personally like to add garlic powder, onion powder and a little bit of turmeric to my wedges for the seasoning. And don’t forget to salt and pepper generously!

Roast Beef Sliders & Potato Wedges

Method
- Fill a large bowl with hot water and place potato wedges in bowl for 30 minutes
- Preheat oven to 425 degrees
- Drain water and pat the wedges dry with a paper towel
- Sprinkle the wedges with seasoning and toss until coated
- Place coated wedges on parchment lined baking sheet
- Bake for 40 minutes, flipping wedges halfway through cook time
- While your wedges are cooking, remove rolls from package, but keep intact
- Place on parchment lined baking sheet
- Slice the whole roll in half creating a bottom and a top bun
- Spread one side with horseradish mustard and the other side with mayonnaise
- Top bottom bun with 2 slices of provolone
- Pile roast beef on each individual bun and top with 2 slices of cheese
- Place top bun on top of cheese
- In a bowl, stir together melted butter, poppy seeds, onions, Worcestershire sauce, and garlic
- Pour melted butter mixture over sliders
- Bake in oven with wedges for last 20 minutes of baking
- Once baked, cut larger bun into individual sliders

Tips and Tricks:
- I chose to bake these on a baking pan instead of a glass pan this time. It created a sandwich that was much less messy! You could even add them to the pan with the potato wedges if there’s enough room to save on cleaning.
- To reduce the cost, use condiments you already have in your fridge. Switch to ham to save some cost on meat since roast beef can be pricey out of the deli.
