Easy Chicken Pot Pie Dinner

I made this easy golden-brown chicken pot pie. This is a must make comfort food! With shortcuts like using store bought pie crust it saves time on those busy week nights! I used homemade pie crust for this recipe but store bought is equally as delicious and easy. You can also save time by using rotisserie chicken and frozen vegetables. Saving you prep time as you assemble your chicken pot pie.

I did make it little easier by using frozen mixed veggies and rotisserie chicken. I like using the rotisserie chicken. It adds flavor. It also saves you a step of baking chicken before assembling the pie.

For the poultry seasoning, I used some I got from one of our favorite places in Michigan… Bavarian Inn in Frankenmuth. They are known for their fried chicken, and it never disappoints!

Growing up, our family had a tradition. We went to Frankenmuth, Michigan every year around Christmas time. We did this to enjoy their famous Bavarian Inn chicken dinner. This turned out great as a large pie to feed the whole family. It would also work for individual mini pot pies. This recipe would also work well for freezer meal prep!

Ingredients You’ll Need:

  • Pie Crust- Forms the base of the chicken pot pie. Adds a delicious flaky texture to the meal. Can use homemade or store bought pie crust.
  • Butter– Used to create the filling of the pie. Helps create the creamy filling.
  • Flour- Used to create the filling of the pie. Helps to thicken the pie filling so that the crust doesn’t become soggy.
  • Poultry Seasoning- Helps create the signature chicken flavoring of the chicken pot pie.
  • Chicken Broth- Used to create the filling of the pie. Provides texture for the filling.
  • Milk- Used to create the filling of the pie. Creates the creaminess of the filling. Also helps thicken the filling to prevent a soupy chicken pot pie.
  • Shredded Chicken- The main source of protein and main ingredient of the pie! You can use shredded chicken baked at home or purchase a rotisserie chicken to make things easier.
  • Frozen Vegetables- A frozen mixed vegetable pack is perfect for adding in healthy nutrients and still having a filling meal! I like frozen vegetable packs that include: peas, carrots, corn, and green beans.

Chicken Pot Pie

Golden pie crust with a hearty filling
Prep Time 30 minutes
Cook Time 45 minutes
Servings: 8 servings
Course: dinner

Ingredients
  

  • Pie crusts (cold) store bought or homemade
  • cup butter (cold)
  • cup flour
  • Salt & pepper to taste
  • 1 tbsp poultry seasoning
  • 1 ¾ cup chicken broth
  • ½ cup milk
  • 2 cups shredded chicken
  • 2 cups frozen mixed veggies

Method
 

  1. Preheat oven to 425 degrees
  2. Place one crust in a 9-inch pie pan
  3. In a large skillet, melt butter and whisk in flour, salt, pepper, and poultry seasoning until thick
  4. Slowly add in the milk and broth, stirring until thick
  5. Stir in shredded chicken and mixed veggies
  6. Pour chicken mixture in prepared pie pan and cover with other crust
  7. Cut several slits in pie crust
  8. Bake for 30 minutes and remove from oven
  9. Cover pie edges with aluminum foil and place back in oven for 15 minutes

Baking Tips!

  • Keeping the butter and the pie crust cold will guarantee that the crust will have a nice a flaky result!
  • Let the pie filling cool slightly before adding to your pie crust. Filling that is too hot will melt the crust and ruin the flaky texture. It may also make the bottom crust soggy.
  • Don’t be afraid to salt well! Salt brings out the flavor and balances taste in your chicken pot pie. So don’t be afraid to add that salt and pepper!
  • Make sure you allow your chicken pot pie to rest for at least 15 to 20 minutes after baking. This allows the filling of the pie to set up nicely. It also allows the pie to cool so you don’t end up burning your mouth!
  • If cooking in a ceramic pie pan, it might take a little longer. The crust may need more time to cook all the way through. This is in contrast to using a metal pie pan which might take less time to cook.
