Chicken Pot Pie

Golden pie crust with a hearty filling

Ingredients

  • Pie crusts (cold) store bought or homemade
  • cup butter (cold)
  • cup flour
  • Salt & pepper to taste
  • 1 tbsp poultry seasoning
  • 1 ¾ cup chicken broth
  • ½ cup milk
  • 2 cups shredded chicken
  • 2 cups frozen mixed veggies

Instructions

  • Preheat oven to 425 degrees
  • Place one crust in a 9-inch pie pan
  • In a large skillet, melt butter and whisk in flour, salt, pepper, and poultry seasoning until thick
  • Slowly add in the milk and broth, stirring until thick
  • Stir in shredded chicken and mixed veggies
  • Pour chicken mixture in prepared pie pan and cover with other crust
  • Cut several slits in pie crust
  • Bake for 30 minutes and remove from oven
  • Cover pie edges with aluminum foil and place back in oven for 15 minutes
