Chicken Pot Pie
Golden pie crust with a hearty filling

- Pie crusts (cold) store bought or homemade
- ⅓ cup butter (cold)
- ⅓ cup flour
- Salt & pepper to taste
- 1 tbsp poultry seasoning
- 1 ¾ cup chicken broth
- ½ cup milk
- 2 cups shredded chicken
- 2 cups frozen mixed veggies
Preheat oven to 425 degrees
Place one crust in a 9-inch pie pan
In a large skillet, melt butter and whisk in flour, salt, pepper, and poultry seasoning until thick
Slowly add in the milk and broth, stirring until thick
Stir in shredded chicken and mixed veggies
Pour chicken mixture in prepared pie pan and cover with other crust
Cut several slits in pie crust
Bake for 30 minutes and remove from oven
Cover pie edges with aluminum foil and place back in oven for 15 minutes
