If you’re from the Midwest, you probably know these delicious peanut butter chocolate treats. They have been a longtime fan favorite in my home around Christmas. Buckeyes are such an easy treat to add to your cookie box each year. Your neighbors will thank you!
This recipe starts with creamy peanut butter and unsalted butter. You start by creaming the 2 ingredients together until silky smooth with an electric hand mixer. Next, you’ll slowly add the powdered sugar to the peanut butter. I emphasize slowly, since the powdered sugar will fly out of the bowl! Once the mixture gets crumbly, add the vanilla and the dough will come together.
One of the best parts of this recipe, is that the whole family can help out. Just pinch off a bit of dough and roll it into a ball. Place the dough balls onto a cookie sheet. Once you have all the dough balls formed, pop the baking sheet into the freezer for about an hour. to firm them up.
We use semi-sweet chocolate chips to dip the peanut butter balls into for a nice flavor balance. I do have a secret… I was using the gulf wax in the melted chocolate for years but finally read the package this year. I learned that it is food grade, but not for eating. LOL I switched out the wax with shortening this year to make the buckeyes nice and shiny.

- In a large bowl, mix peanut butter and butter together with electric mixer until smooth
- Add powdered sugar in 1 cup at a time
- Add vanilla
- Form into a dough ball. Pinch off 1 tbsp sized dough balls and form into balls
- Freeze at least 1 hour
- Melt chocolate chips and shortening in microwave until smooth
- Insert toothpick into each dough ball. Dip chilled dough balls into melted chocolate
- Place in freezer until hardened. Keep refrigerated.
