Apple Pie Pop Tart

Keeping the fall apple flavors rolling…

There’s something magical about biting into a warm, flaky pastry filled with gooey apple pie filling — and when it’s small enough to hold in your hand, it somehow becomes even more irresistible. These homemade apple pie Pop Tarts combine the nostalgia of your favorite toaster pastry with the comforting flavors of a classic apple pie. I had a pumpkin cookie cutter at home, so I decided to cut my pie dough out into pumpkin shapes to make these even more fun.

Whether you enjoy them for breakfast, dessert, or a cozy afternoon snack, this recipe is simple, fun, and absolutely delicious.

You are going to love how easy these are to make.  You can customize these to your own taste.

Pie Filling – cut your pie filling up into smaller pieces to fit in the pie dough

Dough – when I make my pie dough, I keep a glass of iced water on the counter to add to the dough

Spice – I added apple pie spice to glaze to amp up the apple pie flavor

The basics…

  • Roll out your dough to 1/8 inch thick
  • Cut your dough into equal size pieces so they fit together properly
  • Put a spoonful of filling on each pie piece
  • Top the filled pie piece with another pie piece and crimp the edges with your fingers or a fork
  • Refrigerate the completed pies for 1 hour and then bake for 25-30 minutes or until golden brown 
  • While the pies are baking, make the glaze thick enough to coat the finished pies
  • Once the pies are cooled, coat with glaze and let harden

Apple Pie Pop Tarts

Pop tarts with a deep apple and spice flavor
Prep Time 15 minutes
Cook Time 30 minutes
Servings: 6 servings
Course: Breakfast, Dessert

Ingredients
  

Glaze
  • ¾ cup powdered sugar
  • 1 tbsp milk
  • ½ tsp apple pie spice
  • ¼ tsp vanilla

Method
 

  1. Roll out dough to 1/8" thick and a 9×12 inch rectangle. Cut the rectangle into 9 smaller rectangles. Place rectangles on a parchment lined baking sheet and place in the refrigerator
  2. Repeat with the other pie crust
  3. Once dough is chilled, remove from the refrigerator and put a heaping tablespoon of apple pie filling in the center of each rectangle. Cover each rectangle with a crust and crimp the edges with a fork or your fingers. Cut a few small slits in each pastry for heat to escape while cooking. Refrigerate for 1 hour.
  4. Preheat oven to 350 degrees. Bake refrigerated pop tarts for 25-30 minutes or until golden brown. Let pop tarts cool before glazing.
Glaze
  1. Whisk together powdered sugar, milk, apple pie spice, and vanilla. You're looking for a thick consistency, but if it's too thick add more milk until you get the consistency you want
  2. Spread the glaze on each cooled pop tart. Let sit for about an hour for the glaze to set up.
