When I think of winter, I think of hot cocoa. I’m more of a summer girl, but there is something so cozy about sitting on the couch watching a movie and drinking a mug of hot cocoa.
These cookies remind me of a cup of hot cocoa. The soft cookie has a rich chocolate flavor that can’t be beat. The dough does spread slightly, but that leaves more room for the marshmallow top 😊
Are you team whipped cream or marshmallow on your cup of cocoa? I prefer marshmallows in my cookie. These chocolate cookies are topped with half of a large marshmallow. After the marshmallow is placed on top of the baked cookie, put the cookies bake in the oven just until the marshmallow is soft and gooey.
Finish these cookies off with a simple chocolate drizzle. I melted semi-sweet chocolate chips in a bowl and then filled a sandwich baggie with the melted chocolate. Cut off the corner and have some fun drizzling the chocolate on top of the cooled cookies.
I think these cookies are great on their own or part of a cookie tray or box.

Ingredients
Method
- Combine melted butter and cocoa powder in a large bowl
- Stir sugars into mixture
- Add eggs and vanilla and mix until well combined
- Stir in flour, and baking soda until a sticky dough forms
- Chill dough for at least 1 hour
- Once dough is chilled, preheat oven to 350 degrees
- Use a 2 inch cookie scoop and roll dough into balls, place on baking sheet 2 inches apart
- Bake for 10 minutes
- Cut marshmallows in half. Once cookies come out of oven, place a cut marshmallow on top of warm cookie. Bake for another 2 minutes
- When cookies come out oven, press marshmallow down, slightly
- Cool cookies
- While cookies are cooling, melt chocolate chips
- Drizzle melted chocolate on cooled cookies
