Halloween Cracker Toffee

After making this recipe year after year, I decided to try it out on a smaller baking sheet.  The results were great! The candy turned out less dry than it does on a larger baking sheet.  The butter toffee flavor was much more pronounced in this version, and it muted the semi-sweet chocolate. 

I must admit that working with the melted candy wafers is not my forte’, but I think the end results were fantastic! These turned out perfect for any Halloween get together!

Crackers – I use salted saltine crackers.  I have used ritz crackers in the past, but I like saltines better    

Butter – use unsalted butter, since there is plenty of salt on the crackers

Chocolate – 1 bag of semi-sweet chocolate is enough to cover the baking sheet

The basics…

  • Line a 9×13 baking sheet with parchment paper to make removing the candy easier
  • Cover the parchment paper with a single layer of crackers
  • Heat the sugar and butter on medium heat, stirring frequently and bring to a boil
  • Pour hot mixture over saltine crackers and put in oven for 5 minutes
  • Carefully, remove the pan from the oven and spread the chocolate chips out to cover the crackers
  • Place the crackers back into the oven for 2-3 minutes
  • To create spider webs, create circles with melted white candy wafers
  • Pull a toothpick through the circles to create spider webs

Halloween Cracker Toffee

The classic cracker toffee with a spooky twist

Cook Time 15 minutes

Ingredients
  

  • 1 sleeve saltine crackers
  • 1 cup packed light brown sugar
  • 1 cup butter, unsalted
  • 1 tsp vanilla
  • 12 oz semi-sweet chocolate chips

Equipment

  • 1 medium saucepan
  • 1 13.25×9.25 baking sheet

Method
 

  1. Preheat oven to 400 degrees and line a 9×13 baking sheet with parchment paper   
  2. Cover parchment with saltine crackers in a single layer
  3. In a saucepan, heat the sugar and butter on medium heat, stirring frequently.
  4. When the butter is melted, cook for 3-5 minutes or until the mixture comes to a boil
  5. Remove the pan from the heat once it comes to a boil; stir in vanilla
  6. Pour hot mixture over saltine crackers and put the pan into the oven and let cook for 5 minutes
  7. Carefully, remove the pan from the oven and top the crackers with the chocolate chips, carefully spreading the chocolate chips over the crackers
  8. Place the crackers back in the oven for 2-3 minutes to melt chocolate 
  9. Remove pan from oven and spread melted chocolate. 
To Create Spider Webs
  1. Melt white coating candy until thin and smooth
  2. Place melted candy coating in squeeze bottle or piping bag
  3. Draw circles with the piping bag in the melted chocolate
  4. Drag a toothpick through the circles to create the spider web
  5. Allow chocolate to cool until hardened before cracking
