My egg allergy has kept me from enjoying baked goods at home and at gatherings. I never really took the time to find a replacement for the egg, so I resorted to only eating rice krispy treats. lol
I recently played around with egg replacements for cookies and other baked goods. Some replacements made the cookies hard or flat and didn’t really give me the texture I was looking for.
After months of trying, I finally found the texture I was looking for in a cookie. These cookies bake up just like a bakery style cookie and have a very good flavor.
The secret is oil and baking powder to get these cookies to rise and have a nice texture.
I decided to add a twist to my normal double chocolate chip cookies and add a Halloween flair with Oreos and M&Ms. These are perfect to take to a kid’s Halloween party where there may be children with allergies. They are egg free and nut free!
I hope you try them and like them as much as I do!
Oil – I use olive oil because that’s what I have on hand, but you can also use vegetable oil
Baking Powder – make sure you use fresher baking powder to get the best results
Oreos – give the Oreos a rough chop to get the best texture
The basics…
- Melt the butter and let it cool to room temperature
- Mix together sugar, brown sugar, melted butter, and vanilla in one bowl
- In another bowl combine the baking powder, water and oil to make the egg substitute
- Add the egg substitute to the sugar mixture and combine
- In a separate bowl mix together dry ingredients: flour, salt, and baking soda
- Fold the dry ingredients into to the wet mixture until just combined
- Add in M&Ms and Oreo add ins (may need to use your hands)
- Chill dough for 30 minutes before baking at 350F for 12-15 minutes.
